Strawberry salad with feta and balsamic dressing

You can't beat a sweet, juicy British strawberry.


I nearly did a recipe for strawberry and tofu pudding, but thought against it because it felt like sacrilege to blend up such delicious strawberries rather than leave them in their original juicy format.


Strawberries are very healthy fruits, packed with vitamins (vitamin C, folate, manganese), fibre (soluble and insoluble) and healthy plant chemicals such as antioxidants and anthocyanins, which given them their colour. These properties mean they are good for heart health, blood sugar control and reducing inflammation.


Strawberry season in the UK usually ends around mid- to end-July, so make the most of it while you can.


This recipe for strawberry salad with feta and balsamic dressing in incredibly quick because it doesn't involve any cooking (unless you decide to include grilled chicken).


Recipe: Strawberry salad with feta and balsamic dressing



Serves 2 for lunch

All quantities can be adjusted according to what you have and what you like!


Ingredients


  • 2 large handfuls of baby spinach leaves

  • 10 or so fresh basil leaves

  • 7 or 8 fresh strawberries (ideally organic), hulled and sliced

  • 60g crumbled feta cheese

  • Tin of chickpeas, drained and rinsed OR two grilled chicken breasts

  • Sprinkle of chia seeds


Vinaigrette:

  • 3 tablespoons balsamic vinegar

  • 2 tablespoons extra-virgin olive oil

  • 1 tablespoon honey or maple syrup

  • 1 teaspoon Dijon mustard

  • Salt and pepper to taste


Method


  1. In a large bowl, combine the spinach, basil, strawberries, feta, and your choice of protein (grilled chicken breast or chickpeas).

  2. In a jam jar or small jug, add the vinaigrette ingredients and shake or stir.

  3. Serve the salad, drizzle the vinaigrette over it and sprinkle with chia seeds.
